Two Friends' blog

Two gals from here in Iowa are blogging about their stay at an acetaia in Italy - namely Acetaia Del Cristo.

But what is an acetaia? It is a manufacturer of Traditional Balsamic Vinegar of Modena or Aceto Balsamico Tradizionale di Modena (DOP). And it is amazing stuff. It is not the kind of vinegar that you buy in the supermarket - even if it says balsamic vinegar of Modena. This is in a class by itself.

I was very fortunate to be able to attend a tasting of the vinegars from the Acetaia Del Cristo. We started with ones that had been aged 12 years and went on up through 25 years, 50 years, and even one that had been aged since 1849! That one the owners say is used for meditation!
